First, there are no black leopards in the game, there are black jaguars. You can find rare animals around points on the map where their icon appears. If you go there and don't encounter them on a 1st attempt, approach nearest resurrection point (discovered fireplace or fast travel location), save and quit to the main menu, then reload your game and go to the area with the animal's icon again.
